This smoothie is another way for me to sneak in some veggies. To me, smoothies were always just made with fruit. So it was a game changer when I realized veggies were such a great addition. I started off with just throwing in some spinach and kale here and there but then I learned how to incorporate steamed veggies that would add to the thickness and overall flavor of a smoothie. Certain veggies like squash and pumpkin really amp up the flavors but other veggies including zucchini and cauliflower are a bit more subtle.
I never really used butternut squash in my cooking until my mama introduced me to it. She made a delicious galette and it was so ridiculously good that I’m pretty sure the two of us ate the whole thing by ourselves. I’m planning on making a Paleo version soon:)
Just like the zucchini I used in my Blueberry Zucchini Smoothie, I sliced and steamed an entire butternut squash and threw it in the freezer. It’s so easy to incorporate veggies in your smoothies when you have them ready to go. By combining the frozen squash with only four other ingredients, this smoothie comes together really easily and is incredibly thick and creamy. I topped mine off with some homemade cashew coconut yogurt and a few dashes of cinnamon. Perfection!

- 1 cup butternut squash, steamed then frozen
- 1 banana, frozen
- ½ tsp cinnamon
- 1 scoop vanilla protein
- 1 cup nut milk
- Throw all ingredients in a blender and blend until smooth and creamy.
