People either love cilantro or hate it. I’m a cilantro lover! I throw it in marinades, mix it in with salads, and go absolutely crazy with it in every Mexican dish. My Chipotle Aioli had my dipping game on point! I specifically made a bunch of sweet potato fries and chicken strips just so I could dip them in my smoky aioli. Since my dipping obsession was elevated, I thought I’d work with another one of my favorites and whip up a Cilantro Lime Aioli.
When I first started using cilantro in recipes I would always pick the little leaves off the stems. It made me dread making salsa and guacamole because it took so long to get a good amount of cilantro prepped. Then I discovered the stems are what have the most flavor. Mind blown! So I packed the cilantro, stems and all, in this recipe.
My Cilantro Lime Aioli couldn’t be easier to whip up. Just throw all the ingredients in a food processor and blend until smooth. This is one of those recipes where it tastes better the longer it sits. I like to make it the morning or day before I plan on serving it. But let’s be honest, I have no patience. And when aioli tastes this good, I ain’t waiting a second before I dunk some chicken in it.

- ½ cup avocado mayo
- ½ cup avocado
- ½ cup packed cilantro (including stems)
- 1 clove garlic
- 1 tsp salt
- ½ tsp pepper
- juice of one lime
- Throw all ingredients into a food processor and blend until combined.
- Store in an airtight container in the refrigerator.
