Between work and building our house, my husband and I are constantly on the go. I am really strict on choosing what fuels my body but my husband eats whatever he can get his hands on. Yet as long as he has something nutritious available, he will choose that option over anything unhealthy. It’s all about convenience for him. So rather then have him eat an unhealthy, convenient piece of something, I decided to make some kind of energy ball.
I’m always snacking on dried fruit and nuts. Made in Nature makes several dried fruit products that aren’t sweetened with sugar but for some reason it was extremely hard for me to find a dried cranberry that didn’t contain sugar. Then I discovered Vitacost. They have dried cranberries that are sweetened with apple juice. I was so pumped when I found them! So excited that I also made a cookie recipe with them. With only four ingredients, these balls are so easy to whip up. Either on the go or relaxing in front of the tv, my Cranberry Cashews Balls are something for the both of us to grab and enjoy. Keep them in the fridge to have a refreshing treat on these hot summer days.

- 1 cup cranberries
- 1 cup cashews
- 8 dates
- ½ tsp vanilla extract
- Blend all ingredients in a food processor until they come together.
- Take around 1 tbsp of the mixture and roll into a ball. Repeat for the rest.
- Store in an airtight container in the fridge.
