Acai Bowl (Paleo, Gluten Free, Dairy Free)

This thick and creamy Acai Bowl will make your day. Top it off with some delicious fruit and granola and you’re go to go!

My first post has to be my Acai Bowl. So simple, yet so dang good! This is a weekend staple at my house and my father, the Acai Bowl Snob, says it’s the best. I say snob with the utmost respect of course. The reason being is he requires all the toppings. I’m cool with just throwing some of my paleo granola on top. But him? Oh no no no NO! He must have granola, bananas, strawberries, hemp seeds, shredded coconut, goji berries, and honey to top it all off. If one thing is missing, watch out! Down to the store we go for the missing ingredients:(

The real deal

You won’t find any prepackaged, frozen acai mix in my kitchen. No sir! Straight up Acai Powder is thrown into the blender along with some frozen fruit and a few smoothie add ins. Whip this bad boy up for breakfast, lunch, and heck, I even do it for dinner all the time!

Start with the frozen fruit. Bananas are the key to making this smoothie bowl nice and creamy.

Next throw in your acai powder, chia seeds, vanilla protein powder, and any optional add-ins you desire.

My go to enhancers:

  • vanilla protein powder – I used Organifi
  • maca powder – honeycomb flavor and helps my lady hormones
  • collagen peptides – I love Vital Proteins Collagen Peptides. It adds to the thickness of the smoothie and does wonders for your hair, skins, nails, joints, and muscle tendons.
  • flax meal – good source of fiber and healthy fats

Pour in your liquid of choice. I use my homemade cashew milk but I have also used pretty much every type of nut milk and even water. It is totally your preference. Here’s a quick tip: don’t let your nut milk sit too long in the blender with the frozen fruit. The nut milk will quickly start to coat the frozen fruit and freeze itself too. I move fast once I add the liquid.

Lastly, if you want it extra sweet, add in your honey, coconut nectar, or maple syrup. Then get to blending!

Now it’s time to add on your topping. You can be like me and just throw some granola and call it a day or you can be like my father and really live it up by adding every topping known to man:)

Ingredients
Smoothie Mains
  • ½ cup frozen strawberries
  • ½ cup frozen blueberries
  • ½ frozen banana
  • ½ cup nut milk of choice
  • 1 Tbsp acai powder
  • ½ tbsp chia seeds
optional add-ins:
  • 1 scoop vanilla protein powder
  • 1 scoop collagen peptides
  • ½ tbsp flax meal
  • ½ tsp maca powder
  • ½ tbsp honey
optional toppings:
  • paleo granola
  • shredded coconut
  • hemp seeds
  • cacao nibs
  • bananas
  • strawberries
  • goji berries
  • drizzle of honey
Instructions
  1. Add your frozen fruit to your blender.
  2. Pour in your nut milk.
  3. Scoop in the acai powder, chia seeds, and any add-ins you choose.
  4. Blend it up! It will be thick:)
  5. Add your desired toppings and dig in!
Notes
The thicker the better. I've made this in a nutribullet for years before I bought my Vitamix. To keep it thick, I never add extra liquid. You just need to be patient and do the "stop and shake" every so often. The smoothie will eventually give in:)
